Mung Bean Lentils (Moong Dal)

Ingredients

  • 2 tbsp neutral oil
  • ¾ cup diced tomatoes (~1 small tomato)
  • 1 pack Mouma’s Mung Bean Lentils and spice blend
  • 4.5 cups water (use 3.5 or 4 cups for thicker texture)

The dish

Moong dal is creamy, flavor-packed, and nutrient-dense made of mung beans. With whole spices like cardamom pods, cumin seeds, and a cinnamon stick, moong dal has a complex flavor with a hint of sweetness. 

Instructions

  1. In a large pot, heat 2 tbsp oil, then add diced tomatoes and spice blend. Sauté over medium heat until soft (2-3 min).
  2. Add in lentils to toast until golden, stir frequently (1-2 min).
  3. Stir in 4 cups of water.
  4. Bring to a boil, then cover and simmer on low heat, stirring occasionally (30–35 min).

Make it your own

  • Serve over rice for a classic, hearty meal
  • With Naan or our favorite bread Paratha
  • Add veggies like green beans, peas, carrots, or cauliflower after adding the lentils and water, then simmer together for a one-pot meal with extra flavor and nutrition
  • Enjoy on its own as a cozy, flavorful soup
