The dish
Moong dal is creamy, flavor-packed, and nutrient-dense made of mung beans. With whole spices like cardamom pods, cumin seeds, and a cinnamon stick, moong dal has a complex flavor with a hint of sweetness.
Instructions
- In a large pot, heat 2 tbsp oil, then add diced tomatoes and spice blend. Sauté over medium heat until soft (2-3 min).
- Add in lentils to toast until golden, stir frequently (1-2 min).
- Stir in 4 cups of water.
- Bring to a boil, then cover and simmer on low heat, stirring occasionally (30–35 min).
Make it your own
- Serve over rice for a classic, hearty meal
- With Naan or our favorite bread Paratha
- Add veggies like green beans, peas, carrots, or cauliflower after adding the lentils and water, then simmer together for a one-pot meal with extra flavor and nutrition
- Enjoy on its own as a cozy, flavorful soup
